Spring onions are fantastic. This dip combines them with any fresh herbs that you have and makes an excellent accompaniment to chips of any kind, but could also double as a delicious dressing for potato salad or a chicken salad. To make this vegan friendly, sub your favorite vegan mayo and sour cream.
Yield: 1 ½ cups Time: 20 minutes INGREDIENTS 1 bunch spring onions, thinly sliced 1-2 TBSP olive oil 2 cloves of garlic, minced ½ cup mayonnaise ½ cup sour cream (you can also use Greek yogurt) 2 TBSP lemon juice Generous handful of fresh herbs such as dill, cilantro, parsley, basil; chopped Freshly ground black pepper PREPARATION Preheat broiler and toss the spring onions with olive oil and salt on a baking sheet. Broil, tossing once, until onions are lightly charred, about 15 minutes. Let cool while you prepare the base for the dip. In a bowl, combine the sour cream, mayonnaise, garlic, lemon juice, and herbs. Stir in the cooled onions, and season with pepper and more salt to taste! If serving as a dip, you can top it with even MORE fresh herbs. Comments are closed.
