Charred Onion and Herb Dip
Spring onions are fantastic. This dip combines them with any fresh herbs that you have and makes an excellent accompaniment to chips of any kind, but could also double as a delicious dressing for potato salad or a chicken salad. To make this vegan friendly, sub your favorite vegan mayo and sour cream.
Yield: 1 ½ cups
Time: 20 minutes
1 bunch spring onions, thinly sliced
1-2 TBSP olive oil
2 cloves of garlic, minced
½ cup mayonnaise
½ cup sour cream (you can also use Greek yogurt)
2 TBSP lemon juice
Generous handful of fresh herbs such as dill, cilantro, parsley, basil; chopped
Freshly ground black pepper
Preheat broiler and toss the spring onions with olive oil and salt on a baking sheet. Broil, tossing once, until onions are lightly charred, about 15 minutes. Let cool while you prepare the base for the dip. In a bowl, combine the sour cream, mayonnaise, garlic, lemon juice, and herbs. Stir in the cooled onions, and season with pepper and more salt to taste! If serving as a dip, you can top it with even MORE fresh herbs.
